Caprese Salad (Insalata Caprese)


It is still little under 100F here in Houston, feels nowhere near like Fall. So while tomatoes are still in season, I want to eat as much as possible. It is one of the vegetables I like the most. When I was a child when greenhouses weren’t this much prevalent, at least in Turkey, we wouldn’t get to eat tomatoes during winter. I remember insanely craving for tomatoes; every night it was in my dreams. I couldn’t wait for summer to come so that I’d eat tomatoes. Since I was not very much into any other vegetables at that time, my parents were really perplexed with my obsession to tomatoes.

May be unhealthy, definetely not as much tasty but now we have tomatoes in all seasons and I regret to say I eat them all year around. May be we should not play with nature and our bodies are designed to crave for tomatoes in other seasons but I can’t help.

You don’t always need fancy, complicated dishes. Sometimes, the simplest one is enough to make you feel refreshed and happy. This Caprese Salad, too me, is one of the best ways to eat tomatoes. Fresh, light, raw and with my other favorite thing, cheese. Combined with basil and extra virgin olive oil, in every bite I smell Mediterranean, I smell Aegean, I smell Bodrum to be exact!

Caprese Salad (Insalata Caprese)

Ingredients:

tomatoes, sliced
Buffola Mozzarella, sliced
extra virgin olive oil
fresh basil leaves
salt
dried oregano leaves

Directions:

Arrange tomato, mozzarella slices. Drizzle evoo. Season with salt and oregano. Garnish with fresh basil leaves.
