Recently, I’ve learned that one of my dearest friends is expecting a little one. I’m so happy for them especially having a cutie under 1 myself I cannot find the best words to define being a mom. It is probably the best thing ever happened to me. And you know what if it is a girl, they’ll give her the same name as our daughter- we’ll have another precious Duru! I decided to dedicate these pops to them (especially after learning that they’re one of the few people reading my blog ) It is like a mini-too soon-cyber baby welcome.
These cheesecake pops are so easy that there is actually no recipe to it. It is a no-recipe recipe. They are obviously crowd pleaser and great for parties-for kids or adults!
Cheesecake (I used my leftover Strawberry Swirl Cheesecake- use any cheesecake- leftover, store bought…)
Semisweet or bittersweet chocolate, melted
Toppings of your choice: grated coconuts, hazelnuts, almonds, cocoa nibs, chocolate chips, crushed malt balls, crushed toffee, crushed chocolate-covered espresso beans
With a melon baller or a very small ice cream scoop, scoop 1 1/2-inch balls of cheese cake. Gently give them a ball shape and arrange them on a parchment paper lined baking sheet. Secure a lollipop stick into each cheesecake ball and freeze for about 2 hours. If you don’t have sticks on hand, you can just serve them as balls!
Dip the cheesecake lollipops in the melted chocolate, letting any excess drip off. Then roll in any toppings of your choice. Arrange them on parchment paper lined baking sheet to harden for a few minutes. Then try to swallow one in one bite!!
