Double Chocolate Muffins
(adapted from Linda Lomelino)
300 gr all-purpose flour
80 gr cocoa
1 tablespoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
250 gr granulated sugar
1000 gr butter, melted
1 cup (250 ml) butter milk
2 large eggs
150 gr dark chocolate, coarsely copped
1- Heat oven to 200C(392F).
2- Prepare a cupcake pan with 12 muffin liners.
3- Mix flour, cocoa, baking powder, baking soda and salt in bowl. Set aside.
4- Mix sugar, butter, buttermilk and eggs in a large bowl.
5- Add dry ingredients to wet ingredients and mix until just combined.
6- Stir in 3/4 of the chocolate, (save 1/4 to put on top of muffins).
7- Pour the batter to the pan, filling them completely full.
8- Sprinkle with the remaining chocolate pieces.
9- Bake for 18-21 minutes or until a tester comes out almost clean.
