Sour Cherry Ice Cream

Apparently, multitasking is not my strong suit. It has been over a year since my last post, you can see my excuse at the end of this post baloon.  As I`m dusting the virtual dust of my site please help yourself and enjoy this marvelous sour cherry ice cream. So light and refreshing! Perfect for summer!

Sour Cherry Ice cream

Note: You can make this ice cream with blackberries, strawberries, raspberries…

500 gr sour cheery (fresh or frozen)
120 gr powdered sugar
300 gr heavy cream

1- Puree the cherries and powdered sugar together in the food processer. If you want chunk pieces of fruit in your ice cream, slightly process about 1/3 of the cherry separately and leave bigger pieces.
2- Beat the cream until it forms stiff peaks.
3- Add cream to the fruit puree. Blend them until smooth. If you left aside part of the cherries, it is time to add them to the mixture.
4- Prepare the ice cream according to the instructions of your machine.
5- Freeze the mixture at least 4 hours.
6- Thaw about 5 minutes before serving to achieve a scoopable consistency.
